Tom's Weenie Chili

Ingredients

  • 5 lbs ground chuck
  • 1 cup celery
  • 1 cup onion
  • 1 cup green pepper
  • 3 tbl finely minced garlic
  • 3 tbl chili powder
  • 1 tbl kosher salt
  • 3 tbl sugar
  • 2 tps red chili flakes
  • 2 tps black pepper
  • 2 tbl cumin
  • 1 tsp garlic salt
  • 2 tsp ground allspice
  • 1 tsp onion salt
  • 2 tsp cayenne pepper
  • 3 qt good marinara sauce
  • 2 cups ketchup
  • add water to your style of chili thickness
  • 5 bay leaves
  • 1/4 cup chocolate chips
  • Your favorite dogs and buns
  • Any shredded cheese you like(cheddar, Monterrey Jack)
  • Mustard
  • 1 medium sweet onion
  • 2 ribs celery
  • 1 red bell pepper
  • 4 tbl butter

Preparation

Step 1

Brown meat in cast iron skillet, add fine chopped celery, onions, green pepper, and garlic. Cook till meat is browned, 10-12 min. drain fat.

Combine all spices in a mixing bowl and mix with a whisk.

Add the meat mixture to your large pot, add marinara. ketchup, and water. Stir well to combine.
add spice mixture to your liking, Add bay leaves. Simmer for at least an hour.
Stir in chocolate chips. Simmer an additional 20 mins

Best if chilled and reheated. Before serving fry up the onions, celery ,and red pepper with butter, till veggies are soft. Cook up your favorite dogs. Top your dogs with chili. Cheddar, Monterrey Jack shredded cheese. Spicy Brown or Creole style mustard, and the fried onion, celery, red pepper mixture.
