Ingredients
- 4 bunches flat leaf parsley, leaves only
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons lemon juice
- 1/3 cup olive oil
- 1 red onion, in wafer-thin slices
- 1 tomato, diced
Preparation
Step 1
1. Rinse, spin-dry, and chill the parsley
2. Place salt and pepper in a salad bowl. Add lemon juice. Slowly whisk in olive oil
3. When vinaigrette is thick and stable, add onion and tomato and toss. Add parsley, toss gently and serve.
this was really simple and easy - was a surprise hit for Passover. Nice summer salad. Diced onions instead of slicing.
