Polenta

Ingredients

  • 1 cup Polenta
  • 4 cups chicken broth
  • 1/4 cup butter
  • 1 cup mozzarella or jack cheese

Preparation

Step 1

1. Bring chicken broth to a boil in a large saucepan. Pour polenta slowly into boiling broth, whisking constantly until all polenta is stirred in and there are no lumps.

2. Reduce heat to low and simmer whisking often, until polenta starts to thicken, about 10 minutes. Polenta mixture should still be slightly loose.

3. Add butter into polenta, stir until butter partially melts; mix cheese into polenta, stir until cheese has melted. Stir for an additional 5-10 minutes. Pour into a bowl or pan and serve.

*Note: It is always 1 cup polenta to 4 cups of liquid.
