Ingredients

  • 230 g plain flour
  • 115 g sugar
  • 1/2 tsp salt
  • 125 g currants or sultanas
  • 115 g butter
  • 1 tsp baking powder
  • 2 eggs
  • 1 dstsp lemon zest
  • Caster sugar for dusting

Preparation

Step 1

Heat oven to 200 degrees C
Grease a baking tray
Rub butter into sugar, flour and baking powder
Add whisked eggs and zest
Mix through the sultanas
Divide into desert spoonfuls on the baking tray
Place well apart on tray and bake for 15 mins or until golden brown
Dust with caster sugar.
