Sausage and Fennel with Pasta

Ingredients

  • 1 lb pasta, your favorite shape
  • 1 lb italian sausage, casings removed
  • 1 tbs olive oil
  • 1 fennel bulb, sliced thin
  • 1 onion, sliced thin
  • 1 orange, zested and juiced
  • 3/4 cups parmesan cheese, grated
  • 1/4 cups italian parsley, chopped

Directions

Cook the pasta according to package instructions, drain and reserve 1 cup of the pasta water.

As the pasta is cooking, heat a sauté pan over medium high heat and toss in the sausage. Cook, stirring occasionally, for 5-7 minutes, remove with a slotted spoon and set aside. Add the oil to the pan.

Reduce the heat to medium and add in the fennel and onion. Sauté for 10-12 minutes, until the vegetables are softened.

Add in the orange juice and zest, sausage, pasta and 1/2 cup of the reserved pasta water and 1/2 cup of the cheese. Stir to mix thoroughly. Season with salt and pepper.

Serve over the pasta, garnished with the Parmesan and parsley.
