- Store bought, cook as directed or use your own recipe, cool
- Lemon Filling:
- 1 1/4 1 1/4 1/4 cups sugar, divided
- 6 6 6 tbls. Cornstarch
- 1/2 1/2 1/2 tsp. salt
- 1 1/4 1 1/4 1/4 c. Water
- 2 2 2 tbls. Butter (melted)
- 2 2 2 tsp. grated lemon peel
- 4-5 4-5 4-5 drops yellow food coloring (if desired)
- 1/2 1/2 1/2 c lemon juice
- Cream cheese Filling:
- 2 2 2 pkgs. (8oz) cream cheese softened
- 3/4 3/4 3/4 c confectioners sugar
- 1 1/2 1 1/2 1/2 c whipped topping
- 1 1 1 tbl. Lemon juice
- prepare lemon filling:
- Cream cheese filling:
- 1/2 cream cheese and sugar in large bowl until smooth. Fold in whipped topping and lemon juice. Refrigerate 1/2 c. for garnish. Spread remaining cream cheese mixture into pie shell. Top with Lemon filling. Refrigerate overnight.
- to reserved cream cheese mixture with pastry bag to decorate. You can also use your own whipped cream recipe.
- Store in refrigerator.
Preparation
Step 1
To prepare lemon filling:
Combine 3/4 c sugar, cornstarch, and salt. Stir in water until smooth. Bring to boil over medium high heat. Reduce heat, add remaining sugar. Cook and stir for 2 min. Or until thickened and bubbly. Remove from heat, stir in butter, lemon peel and food coloring if desired. Gently stir in lemon juice. Cool to room temperature, about 1 hour.
Cream cheese filling:
Beat cream cheese and sugar in large bowl until smooth. Fold in whipped topping and lemon juice. Refrigerate 1/2 c. for garnish. Spread remaining cream cheese mixture into pie shell. Top with Lemon filling. Refrigerate overnight.

Store in refrigerator.
