Delicata Squash Soup

Similar to the Butternut Squash soup but a little easier! Great Fall night dinner with crusty bread and salad

Ingredients

  • 2 winter squash (delicata) halved lengthwise and seeded
  • 1/2 onion and 1 shallot (small) chopped
  • 2 cloves garlic, roasted with squash
  • 3-4 cups veg. stock
  • 1/4 cup heavy whipping cream
  • 2 T butter
  • s and p
  • 1/8 t nutmeg
  • 1 t cider vinegar
  • 1 t fresh or dried sage (optional)

Preparation

Step 1

350 oven
place squash with garlic in hollow, face down in a lightly greased baking dish. bake for 45 mins. or until soft in big white baking dish. In a med. to large pot, melt butter and saute onions and sage until translucent. when squash is sof, scrape out of peel into pot with onions; add nutmeg. add stock and cream and simmer for another 20 mins. add cider vinegar and puree all in food processor. salt and pepper to taste and serve.
