Sour cream potato salad

Ingredients

• 4 c. cooked potatoes, cubed
• 1 small onion, chopped
• 3 hard-boiled eggs, chopped (opt)
• 1 c. carrots, shredded & Chopped
• 1/4 c. vinegar
• 2 tblsp mustard
• 1/2 c. mayo
• 1 c. sour cream
• 1 tsp dried dill
• S&P

Preparation

Step 1

Combine potatoes, onion, eggs & carrots in med. bowl
In a small saucepan, heat the vinegar, mustard, mayo & sour cream
Pour the dressing over the potatoe salad mix
Add the dill, S&P.
Serve hot or cold
