Peanut Butter and Jelly Muffins

- 6 tbsp butter
- 3/4 cup peanut butter
- 1-3/4 cups all purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1 large egg
- 1/2 cup brown sugar
- 2 tsp vanilla
- 1/4 cup milk
- 1/2 cup plain Greek yogurt
- 1 cup strawberry preserves

- 1/3 cup sugar
- 1/4 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup butter, melted
- 1-1/2 cup all purpose flour

Preheat oven to 350F, line 12 muffins tins with paper liners and spray with cooking spray. Place the butter and PB in the microwave for 40 seconds. Stir well until completely mixed together.
In a bowl, whisk the flour, baking soda, and salt. In the bowl of a mixer, beat together the egg, brown sugar, and vanilla. Add the butter and PB mixture and beat until well mixed. Add the milk and yogurt and mix. Add the dry ingredients and mix until just incorporated.
Divide the batter so that each cup is 3/4 full. Create a well in the top of each muffin and put about 1 tbsp of jelly into each one.
Whisk together the sugars, cinnamon, salt and melted butter until smooth. Add the flour. Crumble the mixture with your fingers and divide the crumbs to each muffin, covering the jelly. Add a few more drizzles of jelly to each muffin and bake for 18-22 minutes.
