Cheesy Kale and Black Bean Pasta Bake

Ingredients
- 1 375g pkg. macaroni
- 3 cups Kale leaves, shredded
- 2 cups shredded mozzarella
- 1 cup grated Parmesan cheese
- 3 cups jarred tomato and basil pasta sauce
- 2 cups black beans, fresh cooked or canned
- 1 tsp dried oregano
- 6 basil leaves, chopped
- 4 eggs whites
- salt and pepper to taste

Step 1
Preheat oven to 350F. Rinse black beans. Cook macaroni according to pkg to firm tenderness. Combine cooked pasta, kale, mozzarella, parmesan, pasta saue, beans, oregano and basil together in a mixing bowl, reserving 1/2 cup mozzarella and 1/4 cup Parmesan for topping. Season, then add in egg whites.
Lightly spray a large casserole with cooking spray. Add pasta mixture and press to distribute evenly. Cover tightly and bake in oven for 30 mins. Remove lid and sprinkle with cheese topping. Return to oven and bake uncovered for 10 more minutes. Remove from oven and allow to sit for 15 mins.
