Ingredients
- 1 1/2 pounds chicken thighs or breast, skin on, bone-in
- 1/2 cup vinegar
- 1/4 cup water
- 1/4 cup soy sauce
- 3 cloves garlic, minced
- 1/2 teaspoon peppercorns
- 1 bay leaf
- 2 pounds pork belly
- 1 cup soy sauce
- 2 tablespoons garlic, minced
- 1 cup water
- 1 tablespoon peppercorns
- 5 bay leaves
- 4 tablespoons vinegar
- Salt to taste
Preparation
Step 1
Cut chicken into 1 to 2 inch pieces and place in pot with a little oil. Add the rest of the ingredients to chicken and mix. Cover and let marinade in refrigerator for 2 to 3 hours.
On medium high heat, bring chicken to a boil and simmer for 30 minutes.
Uncover and simmer an additional 15 more minutes or until the liquid evaporates.
Marinade the following ingredients for about 1 hour: pork belly, soy sauce and minced or crushed garlic.
In a heated pot, add marinated ingredients and cook for a few minutes.
Next, add 1 cup water, pepper corns and bay leaves and bring to a boil. Turn heat to low and simmer for about 1 hour.
Then add in vinegar and simmer for another 15 minutes.
Salt to taste.
