Devil’s Food Cake

Ingredients

  • 1 1/2 cups flour
  • 2 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 11 TABLESPOONS unsalted butter, softened
  • 1 1/2 cups sugar
  • 2/3 cup cocoa powder
  • 2 eggs, large
  • 1 teaspoon vanilla
  • 1 1/3 cups hot water (110°)

Preparation

Step 1

1. Wash and sanitize utensils and preparation area.
2. Assemble ingredients and equipment.
3. Position oven rack in center of oven; preheat oven to 325°; grease the bottom and sides of two 9-inch round cake pans; dust pans with flour and tap out excess.
4. Sift together the flour, baking soda, baking powder, and salt in a medium bowl. Mix to incorporate.
5. In the bowl of an electric mixer fitted with a paddle attachment beat the butter at medium speed until creamy, 3 minutes.
6. Gradually add the sugar and beat on high speed for about 3 minutes.
7. Add the cocoa powder and beat for 1 minute. Scrape down the sides with a spatula.
8. Beat in the eggs one at a time, beating for 20 seconds after each addition to incorporate the ingredients.
9. Beat in the vanilla.
10. On low speed, add the flour mixture in three additions alternating with the warm water in two additions. Scrape down the sides of the bowl and mix at low speed for 30 seconds.
11. Pour batter into prepared pans.
12. Bake cake for 25-35 minutes.
13. Cool cake for 20 minutes after baking. Remove cake from pan and let cool completely before frosting.
