Tilapia A La Veracruzana

Ingredients

  • 1 Tbsp. H-E-B Extra Virgin Olive Oil
  • 4 Tilapia filets
  • 4 garlic cloves, minced
  • 2 cans (14.5 oz. each ) H-E-B Diced Tomatoes with Green Chilies
  • 1 tsp. dried oregano
  • 1/4 c. Central Market Chopped Spanish Olives, drained
  • 1/4 c. H-E-B Capers, drained

Preparation

Step 1

Heat oven to 375°F.

Heat olive oil in a large skillet. Cook tilapia filets 2 minutes on each side and arrange tightly in a 9x13-inch baking dish. Set baking dish aside.

Return skillet to burner and sauté garlic 2 minutes or until slightly brown. Add diced tomatoes and oregano, and bring to a boil. Reduce heat, add olives and capers, and simmer 5 minutes.

Pour hot tomato mixture evenly over tilapia filets in baking dish. Bake until tilapia is cooked and heated through, about 5 minutes.

Remove from oven and enjoy!
