Ingredients
- brownies:
- use my brownie recipe
- pistachio cream:
- 1/2 cup mascarpone cream (cold)
- 2 table spoons whipping cream
- 2 table spoons honey
- 3-4 table spoons pistachio paste
- pistachio paste:
- 1 cup unsalted pistachios
- 2 table spoons oil

Follow the instructions on how to make brownies here. Instead of pouring the brownie mixture into a baking tray pour it onto the baking sheet lined with parchment paper, about a centimeter thick. Bake for about 15-20 minutes, do the toothpick test to make sure when to take them out. Leave to cool.
Prepare pistachio paste first. Place pistachios into a blender and mix, once they are completely grounded and the mixture starts to stick add oil and mix into a smooth thick paste.
To prepare the cream mix together mascarpone, honey and pistachio paste into an even mixture, don’t over mix. Add more honey if you prefer. Add whipping cream and quickly mix together. Set in the fridge while you wait for the brownies to cool.
Once brownies are cold enough to handle cut them into circles with a small circle cookie cutter, you will need two brownie circles for each sandwich. Turn them upside down and place a dollop of cream on half of the circles, cover each one with remaining brownie circles.
