Southwestern Creamy Corn with Bacon

Ingredients

  • 5 slices bacon, diced
  • 1/2 lg sweet onion, diced
  • 3 cloves garlic, minced
  • 1 poblano pepper, roasted/peeled/diced
  • 1/2 red bell pepper, diced
  • 1 lb package frozen corn (or about 4 cups fresh corn kernels)
  • 1 can creamed corn
  • 1/2 cup chicken broth
  • 1/2 cup whipping cream
  • salt and pepper
  • 2-3 TBSP fresh cilantro, chopped

Preparation

Step 1

Broil poblano pepper til skin blackens on all sides, stick in paper or plastic bag for few min, then peel off skin. Remove seeds and stem and dice.

In large non-stick skillet, saute bacon til crispy and remove to paper towel. Add onions and bell pepper to grease and saute til soft and golden.

Add frozen corn and chicken broth and cook for about 5 minutes. Add creamed corn and poblano pepper and simmer for about 5 minutes. Add cream and simmer until thickened. Season with salt and lots of black pepper. Stir in fresh cilantro before serving.
