Dad-to-Be Black Bean Salad

Ingredients

  • 2 cans (15 oz ea) black beans, rinsed
  • and drained
  • 1 small bell pepper, finely chopped
  • 4 scallions, thinly sliced
  • 2 Tbsp chopped fresh cilantro
  • 2 Tbsp white wine vinegar
  • 1 Tbsp extra virgin olive oil

Preparation

Step 1

Combine all ingredients, and stir well.
Refrigerate overnight to let the flavors
blend.
