Ham & Cheese Muffins

Ingredients

  • 2 cups flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup cheddar cheese, grated
  • 1/2 cup ham, diced
  • 1 egg, slightly beaten
  • 1 cup milk
  • 1/4 cup canola oil

Preparation

Step 1

Measure first six dry ingredients into large bowl. Stir thoroughly. Make a well in center.

Beat egg slightly in small bowl. Mix in milk and oil. Pour into well. Stir only to moisten. Batter will be lumpy. Fill greased muffin cups 3/4 full. Bake in 400F oven for 20 - 25 minutes. Let stand 5 minutes. Remove from pan. Serve warm.

To make Sourdough Muffins, make the following changes;

1 1/2 cups flour
2/3 cup milk
1/2 cup sourdough starter
