Pork roast

This can be done in the oven or in the Ninja cooker with adjustments noted under directions.

Ingredients

  • 3-4 pound bone-in pork shoulder or boneless pork loin with fat left on
  • 1 tablespoon kosher salt
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 teaspoon dried rosemary

Preparation

Step 1

*Preheat oven to 475 degrees F

Tenderize pork.

Place the pork shoulder or loin in a roasting pan. Combing the remaining ingredients in a small bowl. With your fingers, massage the mixture into the pork loin, covering all of the meat and fat.

Roast the pork for 30 minutes on 475 and then reduce heat to 425 degrees F and roast for an additional hour. Test for doneness using an instant-read thermometer. When the internal temperature reaches 155 degrees F, remove the roast from the oven. Allow it to sit for about 20 minutes before carving. It will continue to cook while it rests.

*Ninja cooker adjustments: Preheat stove setting to high. Place pork in Ninja and brown for a few minutes on each side. Turn cooker to oven setting, set at 425 degrees F. Roast for 1-1/2 to 2 hours, depending on weight of pork.
