Watermelon Limeade
Feel free to use fresh lemon or orange juice in place of the lime for a different tangy taste. You can save time by keeping homemade simple syrup (step 1) on hand all summer long. Once reduced, it stays fresh two weeks, covered and chilled.

Ingredients
- 1/2 c sugar
- 3 c seedless watermelon, cut into 1.5" cubes
- 6 lg strawberries, halved
- 1/2 c fresh lime juice
- 1/8 t kosher salt
- Lime slices for garnish
Preparation
Step 1
1. Combine sugar & 1/2c H2O in a small saucepan, and simmer over med heat, stirring constantly, until sugar dissolves. Set aside to cool.
2. Puree watermelon, strawberry & lime juice in a food processor until smooth. Strain through a mesh strainer, pressing lightly, & discard solids.
3. Combine watermelon puree w/kosher salt & reserved syrup. Chill thoroughly, and serve over ice in cold glasses.
