Ingredients
- 2 cups fresh spinach, torn
- 1/2 small red onion, thinly sliced
- 1 fresh navel orange, peeled and sectioned
- 1/2 small can mandarin oranges
- 2 Tbsp toasted pine nuts
- 2 Tbsp orange juice
- 2 Tbsp white wine vinegar
- 2 Tbsp extra virgin olive oil
- 2 tsp honey
- 1 Tbsp fresh cilantro, chopped
- 2 tsp Dijon mustard
- Salt and pepper, to taste
Preparation
Step 1
In large bowl, toss spinach, onion, oranges and pine nuts together. Whisk together all dressing ingredients. Pour over salad and serve.
