Ingredients
- 4 large eggs
- 4 large egg whites
- 2 Tbsp water
- 2 tsp olive oil
- 1 small red onion, cut in half, then thinly sliced into half-moons
- 2 cups chopped cooked broccoli
- 1/4 tsp salt
- black pepper to taste
- 2 oz extra-sharp cheddar cheese, shredded (1/2 cup)

Step 1
Preheat broiler. Combine whole eggs, egg whites, and water in medium bowl and whisk well.
In medium ovenproof nonstick skillet, heat oil over medium heat. Add onions and cook, stirring until it begins to soften, about 3 minutes. Add broccoli and cook for another 2 minutes. Season with salt & pepper. Pour the egg mixture over the vegetables, covering them evenly.
Reduce heat to medium-low, cover and let cook until egg mixture has set around the edges of the pan but still liquid in the middle, about 8 minutes. Sprinkle with cheese.
Place skillet under broiler (2 inches from heat) until surface is set and golden brown, 1-2 minutes. Be careful not to overcook or egg mixture will be tough. Cut into 8 wedges.
