Crispy Oatmeal Cookies
- 1 cup flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup butter or margarine
- 1 cup firmly packed dark brown sugar
- 1 egg
- 1 teaspoon vanilla
- 2 c. quick cooking oats, uncooked
- 1/2 cup pecans, chopped
- 1 cup shredded coconut
Pre-heat oven to 350.
Combine flour, soda and salt and set aside.
Cream butter and sugar. Beat in eggs and vanilla. Add flour mixture, mixing well. Stir in oats, nuts and coconut.
Drop by heaping teaspoon onto lightly greased cookie sheets. Bake for 8 to 10 minutes.
Cookies will sink and flatten when they are removed from the oven.
