ROSEMARY PASTE

Ingredients

  • 2 t minced fresh rosemary leaves
  • 2 med garlic cloves minced or pressed
  • 1/8 t salt
  • Ground black pepper
  • 1 T extra virgin live oil, plus extra for brushing chicken

Preparation

Step 1

Stir together ingredients.

Rub about 1 1/2 t of paste in cavity of the chicken.

Carefully loosen the skin over breast and thigh on each side; slip half of the remaining paste under the skin and distribute evenly.

Rub remaining olive oil on outside of the skin.

Tie the legs together with kitchen twine, and bake for one hour for a 4 pound chicken at 400 degrees.
