Ingredients
- 2 oranges
- 1 (3#) chicken
- 1 T poultry seasoning
- 1 t garlic powder
- 1 t rosemary
- Salt and pepper
- 1/2 c water
- 2 T Worcestershire sauce
- 4 small red potatoes
- 2 carrots
- 16 mushrooms
Preparation
Step 1
Squeeze juice of 1 orange over chicken. Place peel in cavity of chicken and truss. Season with poultry seasoning, garlic powder, rosemary, and salt and pepper to taste. Place chicken in roasting pan. Add 1/2 c water and Worcestershire sauce. Slice potatoes and carrots and add to roasting pan. Squeeze juice of remaining orange over chicken and vegetables. Roast at 375 degrees, 30 minutes, then baste with pan juices. Add mushrooms to pan and continue cooking until chicken and vegetables are done, about 30 to 40 more minutes.
