CHICKEN KEBOBS MARINATED IN YOGURT AND SPICES

Ingredients

  • 2 T fresh lemon juice
  • 1/2 c plain whole milk yogurt
  • 3 T chopped cilantro
  • 1 T grated fresh ginger
  • 2 cloves garlic, minced
  • 1 t gr cumin
  • 1 t gr coriander
  • 2 T canola oil, divided
  • 1 t salt
  • 2 pounds skinless chicken breasts, cut into 2-inch cubes

Preparation

Step 1

In a large glass or ceramic bowl, combine the lemon juice, yogurt, cilantro, ginger, garlic, cumin, coriander, 1 T of the canola oil and the salt. Stir in the chicken cubes, cover and refrigerate for 2- 4 hours.

Prepare the grill. Remove chicken cubes from the marinade and thread onto metal skewers. Brush the chicken with the remaining 1 T canola oil Place the skewers on the grill and grill turning occasionally until the chicken is opaque throughout, 12 – 18 minutes.
