Iranian Tomato and Cucumber Salad

Ingredients

  • 3 Persian or 1 long European cucumber (or 2 regular cucumbers)
  • 1 pound ripe tomatoes
  • 2 TBS fresh lime juice
  • salt to tast
  • 1 garlic clove, mashed to a puree with 1/4 ts salt
  • freshly ground pepper
  • 1/4 cup evoo
  • 2 chopped scallions
  • 4 thinly sliced radishes
  • 1 cup chopped flat leaf parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped cilantro

Preparation

Step 1

If using seedless cucumbers, cut in 3/4 inch dice. If using regular cumbers cut in half lengthwise. Use a small spoon to scrape out he seeds and discard seeds. If waxed, peel first, then proceed to seed and dice. Place cucumbers in a large bowl with the tomatoes.
Whisk the lime juice, garlic, pepper and oil. toss with the cucumbers, and tomatoes. Add the remaining ingredients and toss thoroughly. Taste and adjust seasonings.
If you make it ahead of time, hold the salt and don't toss until ready to serve.
