Sweet Noodle Kugel

If you are unfamiliar with “kugel,” it’s a delicious custard-like noodle dish that’s quite common in Eastern Europe. In America, it’s known mostly for the comfort it serves up on Jewish holidays, such as Passover. My lightened version, still made the old-fashioned way with eggs, butter, cottage cheese, and sour cream, retains the dish’s rich heritage with brand-new guilt-free goodness.

With half the usual calories and carbs, and just 1/3 of the usual fat, this sweet-style kugel is a wonderful addition to any brunch.

Ingredients

  • 8 ounces extra-wide egg noodles
  • 2 tablespoons margarine or butter
  • 4 large egg whites
  • 16-ounces low-fat cottage cheese
  • 3 large eggs
  • 2/3 cup no-calorie sweetener (or 1/3 cup sugar-blend like all natural Truvia Baking Blend)
  • 1 teaspoon cinnamon
  • 3/4 teaspoon vanilla extract
  • 1 cup light sour cream

Preparation

Step 1

1. Preheat the oven to 350°F. Lightly spray a 13 x 9 x 2-inch glass or ceramic baking dish with nonstick cooking spray.

2. Cook the noodles for one minute less than the minimum cooking time on the package directions. Drain the noodles well, return to the pot, add the margarine, and stir to coat. Set aside. In a large bowl with an electric mixer, beat the egg whites on high speed until soft peaks form. Set aside.

3. Place the cottage cheese, eggs, sweetener, cinnamon, and vanilla in a blender, or a large bowl for an immersion blender, and process until almost smooth. If needed, transfer mixture to a large bowl. Stir in the sour cream, add the noodles, and stir again. Gently fold in the egg whites.

4. Spoon the mixture into the prepared baking dish and smooth the surface. Bake for 35 minutes, or until set.
