Stuffed Zucchini

Ingredients

  • 1 lb lean ground beef
  • 4-6 medium italian squash
  • 1 medium yellow onion, chopped
  • Parmesan cheese
  • 1 clove garlic, minced
  • salt and pepper to taste

Preparation

Step 1

Wash squash and cut in half lenghtwise and scoop out center, chop and set aside.

Place the squash shells in a oblong pyrex dish and set aside.

Brown ground beef with the chopped centers from the squash,minced garlic, chopped onion, season with salt and pepper to taste. Cook until done.

Fill the squash shells with the meat mixture and sprinkle generously with parmesan cheese. Bake in oven at 350 degrees for approximately 30 minutes or until squash is tender.
