Ingredients
- 1 1/2 cups onion, chopped
- 2 celery stalks, diced
- 1/2 cup carrots, chopped
- 3 tablespoons olive oil
- 2 clove garlic, minced
- 1 cup zucchini, chopped
- 1 cup mushrooms, chopped
- 4 cups chicken broth
- 11 1/2 fluid ounces Tomato juice
- 1 tablespoon parsley flakes
- 2 cups spinach, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon lemon juice
Preparation
Step 1
In 3-quart soup pot, saute onion, celery, and carrots in olive oil for 10 minutes, stirring often.
Add garlic, zucchini and mushrooms and saute 10 more minutes stirring often.
Add chicken broth, tomato juice, and parsley flakes. Bring to a broil.
Cover and simmer for 1 hour.
Add spinach, salt, pepper and lemon juice and simmer another 15 minutes.
