- Oil-flour spray
- 4 ozs unsweetened chocolate
- 1 stick unsalted butter
- 1/2 cup sour cream
- 1 1/2 tsp baking soda
- 2 cups sugar
- 1/2 tsp vanilla extract
- 1/4 tsp salt
- 2 eggs
- 2 cups flour, sifted
- 1 cup boiling water

Step 1
Preheat oven to 350 degrees.
Spray oil-flour spray on to 8-inch round cake pans. Line the bottom with parchment or wax paper, cut to fit. Make sure the paper is sprayed.
Add chocolate and butter in a double boiler and melt until smooth.
Stir in the sour cream and baking soda in a small bowl and set aside.
Transfer chocolate mixture to an electric mixer bowl.
Add sugar,vanilla and salt. Beat until just mixed.
Add eggs one at a time, beating in between until just mixed after each.
Mix in sour cream mixture.
On low speed, add flour, scraping the sides, and beat until smooth.
On lowest speed, very gradually add the boiling water, scraping side and beat until smooth.
Pour thin mixture into the cake pans.
Bake for 25 to 28 minutes, until tops spring back lightly when pressed with finger.
Cool the cakes in their pans for 10 minutes.
Run knife around rim of cake pan to release. Invert onto rack and cool for 2 hours before frosting.
