Balti Chicken

We made this as part of our curry feast last night with minced turkey. Yummy!

Ingredients
- 2 onions, peeled and thinly sliced
- 2 fresh red chillies, deseeded and thinly sliced
- 6-8 curry leaves
- 3 garlic cloves, peeled and crushed
- 1 tsp ginger, peeled and finely grated
- 1 tbsp ground coriander
- 2 tsp medium curry powder
- 500 grams / 1 lb 2 oz lean minced chicken or turkey
- Juice of 1 lemon
- Small handful of freshly chopped mint leaves
- Small handul of freshly chopped coriander leaves
Preparation
Step 1
Spray a large frying pan with cooking spray and place over medium heat. Add the onion, chilli and curry leaves and stir-fry for 4-5 minutes. Add 4 tbsp water and continue to stir-fry 2-3 more minutes.
Add the garlic, ginger, coriander, curry powder and mince. Stir fry over high heat for 6-8 minutes. Add 5 tbsp water and continue to stir-fry 3-4 minutes or until the chicken or poultry is sealed and cooked through.
Remove from heat. Stir in lemon juice and fresh herbs. Season with salt and serve immediately.
