Artichoke Frittata

Ingredients

  • 3 - 6 oz jars marinated artichoke hearts chopped
  • oil from artichokes
  • 3 bunches green onions, chopped
  • 1 clove garlic, chopped
  • 8 eggs
  • 10 soda crackers, crumbled
  • 1/2 bunch parsley, chopped
  • 1 lb wedge cheddar cheese
  • Dash of Tobasco
  • Dash of Worchestershire sauce
  • each addition. Season with salt and pepper to taste.

Preparation

Step 1

Put oil from artichoke hearts in pan. Fry onions and garlic until limp. Beat eggs in bowl, add crumbs, beat again. Add parsley, cheese, Tabasco,
Worchestershire, and artichokes, beating well after each addition. Season with salt and pepper to taste. When well blended, put in oiled 8 x 12 pan and bake
350 degrees for 35 mins until firm. can be frozen. Serve hot or cold.
