Shallot Vinaigrette

Ingredients

  • 3 T sherry vinegar
  • 1/2 t Dijon mustard
  • 1 t minced shallot
  • Coarse salt & freshly ground pepper
  • 1/4 c + 2T EVOO

Preparation

Step 1

1. Combine vinegar, mustard, shallot, 1/2t salt, & 1/4t pepper in a bowl & whisk to combine.
2. Whisking constantly, add oil in slow, steady stream until it's incorporated & mixture is emulsified.
3. Serve immediately.
