Strawberries with Lemon Cream
Pretty presentation - amazing flavor. Good for parties, showers, brunch, etc.
- 1 pkg (8 oz) cream cheese, softened
- 1/3 c. confectioners sugar
- 1 t. grated lemon peel (lemon zest)
- 1 T. fresh lemon juice
- 2 pints fresh strawberries (approx 42)
- Blueberries for garnish (optional)

In bowl, beat cream cheese, sugar, lemon zest and lemon juice with portable mixer, until smooth. Cover and refrigerate (can be made ahead and refrigerated, but let soften before piping).
Clean strawberries; remove hulls. Place on paper towel lined tray, hulled end down. With a sharp knife, cut an X through the top of each berry (not all the way through). Pull sections gently apart.
Spoon filling into pastry bag (can use a 1/2" star tip). Pipe a heaping teaspoon in center of each berry. Berries can be filled two hours before serving.
--Top with a blueberry
--Place in paper petit four cups
--Place on tray and lightly spinkle with powdered sugar
