Cheddar Garlic Red Smashed Potatoes

Ingredients

  • 8-10 little red potatoes, cleaned and skin left on
  • 1 T parsley
  • 1 T chives
  • 1 t dry mustard
  • 1 t coarse ground pepper
  • 1 t sea salt
  • 1 t paprika
  • 1 t chili powder
  • 1 t chopped garlic
  • 2/3 cup heavy cream
  • 1/2 stick butter, cut into pieces
  • 3 slices cooked bacon, cut into pieces
  • 2/3 cup cheddar cheese (Can use more or less of any of this)

Preparation

Step 1

Preheat oven to 375F.

In large pot, boil potatoes until firm but not mushy. Drain, set aside in large mixing bowl.

Using either a potato masher, the preferred choice, or a mixer, mash the potatoes until skins start peeling away.

Add all the ingredients and mix gently, but thoroughly. In prepared casserole dish, scoop potatoes into dish and with a spatula, smooth top.

Sprinkle with 1/3 c mixed cheeses or your favorite, or....leave plain.

Could crumble some crispy bacon, green onions, etc on top.
