Barbecued Pork and Potatoes

This is a breeze to prepare and the end results are delicious. Serve with coleslaw.

Ingredients

  • 6 medium russet potatoes, peeled and cut into 1 1/2 inch cubes(about 1 3/4 lb.)
  • 2 lb. boneless pork loin, trimmed of fat and cut into 1-inch cubes
  • 1 t. dry mustard
  • 2 c. prepared hickory-flavored barbecue sauce
  • Salt and freshly ground pepper

Preparation

Step 1

Place the potatoes in a 4 qt. electric slow cooker. Top with the pork cubes. Mix the mustard into 1 c. of the barbecue sauce. Spoon evenly over the pork and potatoes.
Cover and cook on the low heat setting 8-9 hours, or until the potatoes and pork are tender. Stir in the remaining 1 c. barbecue sauce. Season with salt and pepper to taste.
