Creamy Rice Pudding with Apples & Dates (Weight Watchers)

This is similar to dessert rice pudding, but less sweet. The addition of fruit makes it a satisfying, hearty breakfast that even the kids will love.

Ingredients
- 4 cup(s) 1% low-fat milk
- 3/4 cup(s) uncooked white rice, long grain
- 2 Tbsp sugar
- 1 large egg(s), beaten
- 1 tsp vanilla extract
- 1 medium apple(s), chopped
- 1/3 cup(s) dried dates, pitted and chopped
Preparation
Step 1
In large saucepan, combine milk, rice and sugar.
Bring rice to a boil over medium-high heat; reduce heat to medium and simmer, stirring occasionally, until rice is tender, about 25 minutes.
Remove 1/2 cup rice mixture and mix with egg. Return to saucepan and add vanilla, apple and dates; heat through. If rice pudding is too thick add milk.
Serve warm. Yields about six 3/4 to 1-cup servings.
