Sweet Potato Cookies

I made these with Sweet Potato, but they would work with pumpkin puree and probably a lot of other things like applesauce. I also substituted toasted pumpkin seeds for the walnuts, and chick pea flour for the whole wheat.
I added a cream based glaze which was a nice addition.

Ingredients
- 1/2 cup all purpose flour
- 1/2 cup whole wheat flour
- 1 ts baking powder
- 1/2 ts baking soda
- 2 ts cinnamon
- 1/2 cup softened butter
- 3/4 cup sugar
- 2 large eggs
- 1 ts vanilla
- 1 cup mashed sweet potatoes
- 1/2 cup rolled oats
- 1/4 cup raisins
- 1/4 cup walnuts
Preparation
Step 1
Preheat oven to 375.
Sift together the flours, baking powder, baking soda and cinnamon.
In a large bowl, cream the butter and sugar. Beat in the eggs, vanilla and sweet potatoes. Gradually add the dry ingredients and mix until combined.
Stir in the oats, raisins, and nuts.
Drop the dough by tablespoons onto the cookie sheets, 2 inches apart. Bake for 8 to 10 minutes.
