Ingredients

  • 3 pounds stew beef, 1 to 2 inch cubes
  • 2 tablespoons shortening
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1 3/4 cups water
  • 1 cup onions, chopped
  • 8 whole carrots, whole
  • 8 medium potatoes, cut in halves
  • Gravy
  • 2 cups broth (liquid from cooked meat)
  • 1/4 cup flour
  • 1/2 cup water

Preparation

Step 1

Brown beef in shortening in cooker. Season with salt, pepper and paprika. Add water.

Cover, set control at 10 and cook 10 minutes after control jiggles (or set at 15 and cook for 8 minutes).

Cool cooker normally for 5 minutes, then place under faucet. Add remaining ingredients.

Cover, set control at 10 and cook 8 to 10 minutes after control jiggles (or cook at 15 for 6 to 8 minutes). Reduce pressure instantly.

Prepare gravy below.

Gravy: Skim excess from broth. Add enough water to broth, if necessary to make 2 cups.

Mix together flour and cold water to make a smooth paste. Gradually stir into broth.

Cook over medium heat, stirring constantly, until gravy is smooth and thickened. Season to taste with salt and pepper.

The following recipe is for a 6 to 8 qt. pressure cooker.
