Andouille Sausage in Red wine and Paprika

  • 2 Tablespoons olive oil
  • 1 pound Andouille sausage cut into 1/2" rounds
  • 1 Tablespoon chopped oregano
  • 2 teaspoons mined garlic
  • 1 teaspoon smoked paprika
  • 1/2 cup red wine

Preparation

Step 1

Brown the sausage slices on both sides at medium-high heat, about 3 minutes per side. Stir in oregano, garlic, and paprika : cook for 1 minute. Add the red wine : stirring, cook about 2 to 3 minutes, until reduced and thickened. Can be served in a bowl to accompany rice, or on individual wooden toothpicks as an appetizer.
