Gascon Clafoutis With Prunes
- 7 tablespoons butter divided
- 1 pound pitted prunes soaked 4 hours in
- 1/2 cup armagnac reserving
- two tablespoons soaking liquid
- 3/4 cup flour
- 1/2 cup sugar
- 8 eggs
- 4 cups milk
Preheat oven to 375 degrees.
Use 1 tablespoon of the butter to grease a shallow 12- to 14-inch quiche dish. Melt the remaining 6 tablespoons butter, browning lightly. Layer prunes in pattern on quiche dish.
Mix flour, sugar, eggs and melted brown butter in a mixing bowl. Add the 2 tablespoons of reserved prune soaking liquid. Stir in milk to form a thin batter.
Pour batter over prunes and bake in oven 35 to 40 minutes, until inserted knife exits cleanly. Serve warm from dish.
This recipe yields 6 servings.
