Thai Peanut Noodles

Ingredients

  • Sauce:
  • 1 pkg. rice noodles or wheat/rice noodles
  • 2 tsp. oil
  • 1 Tbsp. ginger
  • 3 cloves garlic
  • 1 bell pepper, chopped
  • shrimp or chicken (enough for 4 servings)
  • 1 c. chicken stock
  • 2 tsp. peanut butter
  • 1/2 tsp. tobasco
  • 1 tsp. sesame oil
  • Garnish:
  • 1/4 c. chopped green onion
  • 1/4 c. chopped peanuts
  • fresh chopped cilantro

Preparation

Step 1

Mix all ingredients for sauce in a sauce pan, simmer for 8-10 minutes.
At the same time, boil noodles for 8-10 minutes (follow package directions).
Put oil, ginger, and garlic in pan, stir. Add bell pepper and cook for one minute. Add raw shrimp or cooked chicken and cook another three to five minutes. Add (drained) noodles and sauce. Mix together, and plate with green onion, peanuts, and cilantro.
