Carrot Muffins

Comforting and delicious, these amazing carrot muffins are super easy to prepare. Serve with milk or coffee and enjoy!
Ingredients
- 1 3/4 cups of all-purpose flour
- 1/4 cup sugar
- 3 rounded teaspoons backing powder
- 3/4 teaspoon of kohser salt
- 1 teaspoon cinnimon
- 1/2 teaspoon ground mace
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground allspice
- 1/4 teaspoon ground cloves
- 1/8 teaspoon nutmeg
- 1 large egg
- 1 cup whole milk
- 1/3 cup vegetable oil
- 1 teaspoon vanilla
- 2 cups carrots, finely shredded
- 1 cup golden raisans
- Raw sugar

Step 1
Preheat oven to 400°F. Treat large muffin tin with cooking spray.
In medium mixing bowl combine all dry ingredients.
In small mixing bowl combine all wet ingredients. Add carrots and mix with electric hand mixer on medium speed for 2 to 3 minutes.
Add golden raisins to dry ingredients and then add wet ingredients to the dry ingredients and thoroughly combine.
Fill muffin tin with muffin batter. Top each muffin with a generous sprinkle of raw sugar.
Place in oven and bake for 20 minutes. Let cool for 10 minutes before removing from tin. Enjoy while still warm.
