Banana Nut Blondies*

These blondies are a great way to use up any overripe bananas you may have sitting on your counter.

Ingredients
- 1/2 cup (4 ounces) unsalted butter, cut into 8 tablespoons
- 3/4 cup packed brown sugar
- 1 egg, room temperature
- 1 teaspoon vanilla
- 1/2 cup mashed banana (roughly 1 medium banana)
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
- 1/2 cup chopped walnuts
- 1/2 cup chopped pecans
Preparation
Step 1
Preheat oven to 350F. Line an 8x8 pan with parchment paper or foil lightly greased with cooking spray.
In a large saucepan, melt the butter. Remove from the heat and whisk in the sugar. Beat in the egg, vanilla, and banana. Gradually whisk in the flour, baking powder, and salt. Stir in the walnuts and pecans.
Pour the batter into the pan and bake 20-23 minutes or until a toothpick inserted in the center comes out clean (a few crumbs are ok). Cool completely before cutting. Store in an airtight container for up to 1 week.
