Grilled Smoked Turkey Sandwiches

  • 8 slices sourdough sandwich bread
  • 4 T honey Dijon mustard
  • 1/2 lb sliced low-fat Swiss style cheese or Gruyere or Muenster
  • 1/2 lb sliced smoked or roasted turkey
  • 12 arugula leaves
  • 1 T EVOO

Step 1

1. Place 4 bread slices on work surface; spread each w/1T mustard.
2. beginning & ending w/cheese, equally divide the cheese, turkey & arugula leaves over each bread slice.
3. Top w/remaining bread.
4. Heat lg skillet, grill pan, griddle or sandwich press (panini).
5. Grease surface w/EVOO.
6. Cook sandwiches until bread is nicely browned on each side & cheese is melted, about 3-4 minutes each side uncovered pan.
7. Cut sandwiches in half crosswise.
8. Delicious w/tomato soup.
