Super Simple Fish & Veggies in Foil

Ingredients

  • 4 ounces firm, white fish (I used Hake)
  • 1/2 zuchinni, sliced
  • 1/2 yellow squash, sliced
  • 1/2 bell pepper, sliced
  • 6 grape or cherry tomatoes
  • 2 cloves garlic, crushed and minced, divided
  • three slices lemon
  • 1 tablespoon capers
  • 1 teaspoon olive oil
  • salt and pepper

Step 1

Preheat the oven or grill to 450F.
Take a large piece of foil (double layer if you think your foil is flimsy) and lay it out on the counter.
Arrange all the vegetables in the center of the foil.
Sprinkle 1/2 the garlic over the vegetables.
Place the fish on top of the vegetables, then arrange lemon slices on top of the fish.
Cover the fish with the remaining garlic, the capers and then drizzle on the olive oil.
Draw up the sides of the foil and create a packet. Make sure you leave some room within the packet for steam.
Grill or bake the packet for about 15-20 minutes, till the fish is opaque.
Serve directly from the foil!
