2 Minute Chocolate Cake

Ingredients

  • 2 Tbsp (30 ml) butter
  • 2 Tbsp (30 ml) dark chocolate chips
  • 1 large egg
  • 1/4 C (60 ml) sugar
  • 3 Tbsp (45 ml) milk
  • 2 Tbsp (30 ml) Epicure Pure Cocoa
  • 1/2 tsp (2.5 ml) Epicure Vanilla Extract
  • 2 Tbsp (30 ml) all-purpose flour
  • 1/2 tsp (2.5 ml) Epicure Baking Powder

Instructions

1. In a medium bowl, combine butter and chocolate chips. Microwave on high for 30 seconds, or until melted, and stir.
2. Whisk in egg.
3. Stir in sugar, milk, cocoa, and vanilla. Add the flour and baking powder and beat until smooth.
4. Lightly oil two Epicure Cakes for One with Epicure Silicone Basting Brush. Divide the batter between the two molds and microwave on high for 1½–2 minutes until cooked. A toothpick should come out nearly clean.
