Nouveau Hoppin' John

Hoppin’ John, but with sherry & rosemary. Good with Tabasco sauce or cider vinegar.

Ingredients
- 2 c black-eyed peas
- 1 medium onion, diced
- olive oil
- 1 T dried rosemary
- 2 tsp celery salt
- 1/4 c sherry
- 4 c stock
- 1/2 c Arborio rice
Preparation
Step 1
Cook the beans in salted water for a long time - at least two hours. Drain.
Simmer the diced onion in olive oil until translucent. Add the rosemary, celery salt, & some sea salt. Pancetta would be good, too.
Add the drained beans to the onion mixture; stir. Turn the heat up to medium high. Add the rice & stir to coat. Add the stock & simmer for 25-30 minutes.
