Sweet Potato Casserole

Ingredients
- Potatoes:
- 5-6 nice size sweet potatoes
- 1/2 c sugar
- 1 tsp vanilla flavoring
- 2 eggs
- 1/2 stick butter
- Topping:
- 1 c self-rising flour
- 1/2 c light brown sugar
- 1 stick butter, melted
- 1 c coarsely chopped "Georgia" pecans

Preparation
Step 1
1. Peel, cut up and boil sweet potatoes until tender. Drain well and mash.
2. Add sugar, vanilla, eggs, 1/2 stick butter. Mix well and place in 2 qt buttered casserole dish.
3. Mix topping ingredients (except pecans) with a fork until crumbly. Add pecans. Sprinkle on top of mashed potatoes.
4. Bake at 350 for 35-45" - or until topping is brown and potatoes are set.
Delicious hot or cold - freeze great!
