Buffalo Chicken Rollups

When I had a craving for buffalo chicken dip this was a great alternative to stuffing my face with the unhealthy munchy. This recipe is adapted from a recipe found in Taste of Home magazine. The picture is taken from the Taste of Home website.

Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and Pepper to taste
  • 1 c. crumbled blue cheese
  • 1/2 c. grated parmesan cheese
  • 1/4 c. Frank's Red Hot sauce
  • 2 tbsp mayonnaise
  • 1 c. crushed cornflakes

Preparation

Step 1

1. Flatten chicken breasts to 1/4" thickness. Season with salt and pepper. Sprinkle with blue cheese and parmesan cheese. Roll up from a short side and secure with toothpicks.

2. In a shallow bowl, combine pepper sauce and mayonnaise. Put cornflakes in a separate shallow bowl. Dip chicken in hot sauce mixture and then coat in cornflakes. Place seam-side down in a greased 11" x 7" baking dish.

3. Bake uncovered at 400 degrees for 35 - 45 minutes, or until chicken is no longer pink. Discard toothpicks.
